Hans - Food For Thought No. 16


  • 1.5 to 2.0 Litre of home-made Beef Broth
  • 600g tender brisket and/or short rib, cut in cubes
  • 400g potatoes cut in cubes, drained
  • 400 g hand-made spätzle
  • 150 g onions in thin rings
  • Black pepper
  • Butter for frying the onions
  • Parsley, chopped
  • Salt


  • Cook potatoes in salt water until soft, drain
  • Fry onions in butter until soft and a bit coloured, add salt
  • Heat up the broth, add  potatoes, spätzle and meat
  • Check seasoning
  • Spread onions on top, check temperature
  • Sprinkle with parsley and serve
